Grape

100% Chardonnay

Terroir

The terroir is essentially composed of clay-limestone soil on the hillside where pinot noir, gamay and aligoté are cultivated. Chardonnay is reserved for the deepest soils of the lower loam and more rich, to avoid any risk of water stress.

Winemaking

Harvesting takes place mechanically for white grape varieties, over ten days.
The harvest is 100% destemmed.
The juice must ferment for several weeks in thermoregulated stainless steel vats (controlled temperature during vinification 16 to 18°C).
Systematic malolactic fermentation.
Aging on fine lees to keep the full potential of the wine until at bottling.
