Our white Burgundy comes from southern Burgundy, bordering on Beaujolais wines.
The Chardonnay is planted on shallow, predominantly limestone soils.
The vines face south/southeast, growing on plateaus and hillsides.
The average age of the vineyard: 30 years.
Manual and mechanical harvesting.
Pneumatic pressing of the harvest.
Vinification in thermoregulated stainless steel vats (controlled temperature during vinification 16 to 18°C).
Systematic malolactic fermentation.
Aged in oak barrels for 6 months.
