Soils: Deep granite and sand on the surface.
Age of the vines: from 8 to 40 years.
Manual harvest at full maturity of the grapes at the beginning of September.
Direct pressing with pneumatic press, very gently (<1.4 bars).
Fermentation at low temperature (15°c) for 15 to 20 days.
Storage in vats at 14°C before bottling.
